Our raw honey consists of wildflower (medium or dark) or Japanese Knotweed (red bamboo). Japanese knotweed yields a monofloral honey, usually called bamboo honey by northeastern U.S. beekeepers. This honey is very dark with a red tint, it has a pleasantly sweet taste with floral berry notes.
NOTE: All honey varieties come from bees pollinating different plant species, such as wildflowers or local trees, and this may create subtle distinctions in the flavor of the honey. From year to year, tastes and colors may vary.
